Ingredients

Scale
  • 2 cups diced Granny Smith apples (about 2 medium apples)
  • 1 cup sliced celery (about 3 stalks)
  • 1/2 cup toasted walnuts, roughly chopped
  • 1/2 cup dried cranberries (unsweetened)
  • 1 cup plain Greek yogurt
  • 2 tablespoons honey
  • Salt and pepper to taste

Instructions

  1. Wash the apples and celery thoroughly. Core the apples and cut them into bite-sized cubes; slice the celery into thin pieces.
  2. Toast the walnuts in a dry skillet over medium heat for about 5-7 minutes until golden brown.
  3. In a mixing bowl, combine Greek yogurt, honey, salt, and pepper. Whisk until smooth.
  4. In a large bowl, mix together the apples, celery, toasted walnuts, and dried cranberries. Pour the dressing over this mixture and stir gently until coated.
  5. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
