  • 34 pounds boneless beef shoulder roast
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 fennel bulb (sliced)
  • 1 large onion (sliced)
  • 4 garlic cloves (smashed)
  • 1 cup white apple vinegar
  • 1/4 cup Dijon mustard
  • 3 bay leaves
  • Fresh thyme and rosemary sprigs
  • 1 cup chicken stock

Instructions

  1. Heat oil in a large fry pan over medium-high and sear the beef on all sides (10-12 minutes). Remove from pan.
  2. Deglaze the pan with white apple vinegar, scraping up browned bits.
