  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1 teaspoon baking soda
  • Pinch of salt (or to taste)
  • 1 tablespoon dairy-free milk (if needed)
  • 1/4 cup vegan block butter (room temperature)
  • 4 oz vegan cream cheese (room temperature)
  • 2 cups powdered sugar / icing sugar (or to taste)
  • 1/2 teaspoon vanilla extract
  • Orange and green food coloring (optional)
  • 3 tablespoons chopped walnuts (or pecans, optional)

Instructions

  1. Preheat your oven to 180°C (350°F) and line baking sheets with parchment paper.
  2. In a mixing bowl, combine brown sugar and vegan butter until creamy. Mix in shredded carrots and vanilla extract.
  3. In another bowl, whisk together flour, cinnamon, nutmeg, ginger, baking soda, and salt. Gradually add this dry mixture to the wet ingredients until fully combined.
  4. Scoop dough onto lined baking sheets, spacing them apart.
  5. Bake for about 13 minutes or until golden around the edges. Let cool before transferring to wire racks.
  6. For the frosting: Combine vegan butter and vegan cream cheese until smooth; gradually mix in powdered sugar and vanilla extract.
