  • 2 turkey thighs
  • 3 cups rice
  • 2 large tomatoes
  • 1 onion
  • 1 carrot
  • Chicken seasoning cubes
  • Bell peppers (red and green)
  • Garlic and ginger

Instructions

  1. Debone and cut turkey thighs into small pieces; season with garlic powder, onion powder, paprika, chili pepper, chicken seasoning cube, and salt.
  2. In a large pot, combine reserved turkey bones with chopped onion, sliced carrot, garlic, ginger, water; boil then simmer for 15 minutes to create stock.
  3. Blend red bell peppers, tomatoes, habanero, and half a green pepper until smooth; strain the stock.
  4. Rinse rice under cold water; cook in a pot with one cup of turkey broth and one cup of water until fluffy.
  5. Fry seasoned turkey pieces in oil until cooked through; sauté onions and garlic in the same pan before adding the blended vegetable mix.
  6. Combine everything together with cooked rice and serve hot.
