  • 3 medium carrots
  • 3 medium parsnips
  • 9 stalks asparagus
  • 12 slices thick-cut turkey bacon
  • 1/2 cup maple syrup (or honey/agave)
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon ground cumin
  • 1 teaspoon ground ginger
  • 1 teaspoon salt

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and peel carrots and parsnips, cutting them into sticks about 4-5 inches long. Trim asparagus ends.
  3. Wrap each vegetable stick with turkey bacon tightly, securing with a toothpick if needed.
  4. In a bowl, whisk together maple syrup, vinegar, cumin, ginger, and salt.
  5. Line a baking sheet with parchment paper and place wrapped bundles on it. Brush half of the glaze over the bundles.
  6. Bake for about 25 minutes until the turkey bacon is crispy. Drizzle remaining glaze before serving.
