  • 1 (22 to 24-ounce) package frozen OR fresh cheese tortellini
  • 16 ounces (about 3 cups) sliced cherry OR grape tomatoes (halved or quartered, depending on size)
  • 2 1/2 cups fresh corn kernels
  • 1/4 cup fresh basil leaves (sliced in a chiffonade)
  • 2 tablespoons grated Parmesan cheese
  • Freshly ground black pepper
  • 1/2 cup extra-virgin olive oil OR another neutral-flavored oil
  • 1 tablespoon red apple vinegar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon Dijon mustard
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon finely minced fresh basil
  • 1/2 teaspoon fresh minced garlic
  • 1/2 teaspoon garlic salt
  • Freshly ground black pepper

Instructions

  1. Boil cheese tortellini in salted water according to package directions until al dente.
  2. Drain the tortellini and cool under cold running water.
  3. In a large salad bowl, add the cooked tortellini.
  4. Add the sliced tomatoes, fresh corn kernels, basil chiffonade, 2 tablespoons of Parmesan cheese, and freshly ground black pepper.
  5. In a jar with a tight-fitting lid, combine olive oil, red apple vinegar, lemon juice, Dijon mustard, Parmesan cheese, minced basil, minced garlic, garlic salt, and more black pepper.
  6. Close the jar tightly and shake vigorously until all ingredients are well combined.
  7. Pour the vinaigrette over the tortellini salad mixture.
  8. Gently mix all ingredients until everything is evenly coated.
  9. Chill in the refrigerator for several hours before serving.
