  • 1 cup powdered sugar
  • 2 cups all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 3/4 cup toffee bits
  • 2 tablespoons butter, melted
  • 1/2 cup powdered sugar, sifted
  • 1 tablespoon milk or cream
  • 2 tablespoons extra toffee bits, for topping

Instructions

  1. In a mixing bowl, cream together the softened unsalted butter and powdered sugar until light and fluffy.
  2. Add vanilla extract and gradually mix in all-purpose flour and salt until just combined.
  3. Fold in toffee bits evenly throughout the dough.
  4. Divide the dough into two logs about 2 inches wide. Wrap tightly in plastic wrap and chill in the refrigerator for at least 2 hours.
  5. Preheat your oven to 350°F (175°C). Slice each chilled log into 1/4-inch rounds and place on a parchment-lined baking sheet.
  6. Bake for 10–12 minutes or until edges are lightly golden.
  7. Cool completely on a wire rack before glazing.
  8. For the glaze, melt butter and stir in powdered sugar and milk. Mix until smooth; adjust consistency as needed.
  9. Once cookies are cooled, drizzle the glaze over them and sprinkle with extra toffee bits.
