  • 1 cup pearl barley
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 2 ½ cups vegetable broth
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley for garnish

Instructions

  1. Rinse the pearl barley under cold water until the water runs clear, then drain thoroughly.
  2. In a medium saucepan over medium heat, heat olive oil and 1 tablespoon of butter. Add the rinsed barley and toast for about 5 to 7 minutes until golden and aromatic.
  3. Add the finely chopped onion and cook for about 3 minutes until softened. Stir in minced garlic and thyme; cook for an additional minute until fragrant.
  4. Pour in the vegetable broth along with salt and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for about 25 to 30 minutes until the barley is tender.
  5. Remove from heat and let stand covered for another 5 minutes. Stir in the remaining butter and fluff the barley with a fork.
  6. Garnish with chopped fresh parsley before serving.
