  • 20-ounce can pineapple slices
  • 12 maraschino cherries
  • 1 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1 large egg
  • 1/2 cup buttermilk
  • 1/3 cup sour cream
  • 3 tablespoons canola oil
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 350°F.
  2. Melt the butter in a microwave-safe bowl and pour it into a greased springform pan. Sprinkle brown sugar over the melted butter.
  3. Arrange one whole pineapple slice in the center of the pan, then fan out additional slices around it. Place cherries in the center and between slices.
  4. In one bowl, mix flour, granulated sugar, baking powder, and salt. In another bowl, whisk together buttermilk, sour cream, oil, egg, and vanilla.
  5. Combine wet and dry ingredients gently until just mixed; small lumps are fine.
  6. Pour batter over the pineapple arrangement and bake for about 40 minutes until set.
  7. Cool on a wire rack for at least 30 minutes before inverting.
