  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tbsp butter (melted)
  • 2 (8 oz) pkgs cream cheese (softened)
  • ½ cup granulated sugar
  • ¼ cup sour cream
  • ½ tsp vanilla extract
  • 2 eggs (room temperature)
  • 1 ½ cups fresh strawberries (chopped)
  • 5 tbsp sugar (for topping)
  • 3 tbsp water
  • 1 tbsp lemon juice
  • 2 tsp cornstarch

Instructions

  1. Preheat oven to 350°F. Line an 8×8 or 9×9 inch baking pan with parchment paper.
  2. In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press firmly into the bottom of the prepared pan.
  3. In a large bowl, mix softened cream cheese, sugar, sour cream, and vanilla until smooth. Add eggs one at a time on low speed until just combined.
  4. Pour the filling over the crust and bake for 25-35 minutes until the center is slightly jiggly.
  5. Let cool at room temperature for about 1-2 hours before refrigerating for at least 3-4 hours before slicing.
