  • 1 large sweet potato
  • 3 tablespoons avocado oil
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ¼ teaspoon paprika
  • ½ red onion, diced
  • 4 cups kale, chopped and tightly packed
  • 4 eggs
  • 2 tablespoons shredded parmesan cheese
  • ¼ teaspoon crushed red pepper

Instructions

  1. Heat 2 tablespoons of avocado oil in a large skillet over medium heat. Add cubed sweet potatoes, garlic powder, paprika, and ¼ teaspoon salt; cook until browned (about 10-12 minutes). Remove from skillet.
  2. In the same skillet, add remaining oil and diced red onion; sauté for 1-2 minutes until softened. Add kale and remaining salt; cook until wilted (about 2 minutes).
  3. Return sweet potatoes to skillet. Create four wells in the mixture and crack an egg into each well. Cover and cook until egg whites are set (5-7 minutes). Top with parmesan cheese and crushed red pepper before serving.
