  • 2 large sweet potatoes, peeled and cut into 1-inch cubes
  • 12 slices turkey bacon, halved or cut into thirds
  • ¼ cup brown sugar
  • 2 tablespoons maple syrup or honey
  • 1 tablespoon olive oil or melted butter
  • ½ teaspoon cinnamon
  • ¼ teaspoon cayenne or chili powder

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Parboil sweet potato cubes in boiling water for 5–7 minutes until fork-tender. Drain and cool slightly.
  3. In a mixing bowl, whisk together brown sugar, maple syrup (or honey), olive oil (or melted butter), cinnamon, cayenne (or chili powder).
  4. Toss cooled sweet potato cubes in the glaze until evenly coated.
  5. Wrap each sweet potato cube with turkey bacon and place on the baking sheet.
  6. Bake for 25–30 minutes, flipping halfway through until Turkey bacon is crisp and potatoes are caramelized.
  7. Serve warm with optional dipping sauces.
