  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 3 cloves garlic (minced)
  • 1 teaspoon ground ginger (optional)
  • 1 cup pineapple chunks (for garnish)
  • 1 medium red bell pepper (thinly sliced)
  • 2 tablespoons cornstarch
  • 1/4 cup water
  • 4 cups rice
  • Salt & pepper (to taste)
  • Green onions (optional garnish)
  • Sesame seeds (optional garnish)

Instructions

  1. Place the chicken in the slow cooker.
  2. In a bowl, mix together pineapple juice, soy sauce, brown sugar, garlic, and ginger. Pour over the chicken.
  3. Cover and cook on low for about 5 hours or until the chicken is tender.
  4. Remove the chicken; mix cornstarch with water and stir into the sauce in the cooker. Cook on high for about 15 minutes to thicken.
  5. Shred or slice the chicken, serve over rice, and top with pineapple chunks and red bell pepper.
