Ingredients

Scale
  • 2 teaspoons unflavored vegan gelatin
  • 2 tablespoons water
  • 2 cups heavy cream (cold)
  • 56 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 2 loaves pound cake (cut into 1-inch cubes)
  • 6 cups fresh strawberries (chopped)

Instructions

  1. Prepare the vegan gelatin mixture by combining the gelatin and water in a small bowl. Let it sit for about 5 minutes to bloom, then microwave for about 10 seconds to dissolve. Set aside to cool.
  2. In a large mixing bowl, whip the cold heavy cream with sugar and vanilla until soft peaks form. Gently fold in the cooled gelatin mixture until fully incorporated.
  3. To assemble the trifle, layer half of the pound cake cubes in a trifle dish, followed by half of the chopped strawberries and half of the whipped cream mixture. Repeat these layers with remaining ingredients.
  4. Cover with plastic wrap and refrigerate for at least one hour before serving.
