  • 1/2 cup softened butter
  • 2 eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 3/4 cup milk
  • 1 1/2 teaspoons vanilla extract
  • 1 pint diced strawberries
  • 2 tablespoons granulated sugar (for strawberries)
  • 2 ounces cream cheese
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large mixing bowl, beat together granulated sugar and softened butter until light and creamy. Add eggs, baking powder, and salt; mix well.
  3. Alternately mix in all-purpose flour and milk until fully combined. Stir in vanilla extract then pour batter into the prepared dish.
  4. Bake for about 18–20 minutes or until lightly colored and slightly underdone. Cool completely.
  5. Combine diced strawberries with sugar in a small bowl; set aside.
  6. Cream together cream cheese, heavy whipping cream, and powdered sugar in another bowl until stiff peaks form.
  7. Spread frosting over cooled cake and top with marinated strawberries. Cut into bars to serve.
