  • 1 teaspoon Vanilla Extract
  • 1/2 teaspoon Almond Extract (Optional)
  • 1 cup Strawberry Jam or Preserves
  • 1 cup Sprinkles (Optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the flour, baking soda, baking powder, and salt. Whisk together until well blended.
  3. In another bowl, use an electric mixer to cream together unsalted butter, granulated sugar, and powdered sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition. Then stir in vanilla extract and almond extract until combined.
  5. Gradually add the dry mixture into the wet mixture. Mix just until combined; avoid overmixing.
  6. Scoop tablespoon-sized portions onto the prepared baking sheet, leaving space between each cookie.
  7. Make a small indentation in the center of each cookie dough ball. Spoon in about half a teaspoon of strawberry jam.
  8. Bake in the preheated oven for 10–12 minutes or until edges are golden brown. Allow them to cool on the baking sheet for several minutes before transferring to wire racks.
  9. Once cooled, feel free to add sprinkles on top or drizzle with icing if desired before serving.
