Ingredients

Scale
  • 1/2 cup unsalted butter
  • 3/4 cup whole milk
  • 4 cups all-purpose flour
  • 1/4 cup freeze-dried strawberries
  • 1/3 cup granulated sugar
  • 1 tablespoon instant yeast
  • 1 teaspoon salt
  • 3 large eggs
  • 11 fresh strawberries (chopped)
  • 3 ounces cream cheese
  • 1 teaspoon vanilla bean paste or 1 tablespoon pure vanilla extract
  • 1/3 cup granulated sugar (for filling)
  • 1 tablespoon water (for filling)
  • 2 teaspoons cornstarch (for filling)
  • 1/4 cup unsalted butter (for frosting)
  • 2 cups powdered sugar (for frosting)
  • 2 teaspoons matcha (sifted)

Instructions

  1. 1. Melt butter and let cool. In a bowl, combine warm milk and yeast; let sit until foamy.
  2. 2. Mix sugar, salt, eggs, melted butter, and vanilla with the yeast mixture. Gradually add flour and freeze-dried strawberries to form a soft dough.
  3. 3. Knead the dough on a floured surface for about 5 minutes. Let rise in a greased bowl until doubled (about 1 hour).
  4. 4. Prepare the filling by cooking chopped strawberries, sugar, water, and cornstarch in a saucepan until thickened.
  5. 5. After rising, roll out the dough into a rectangle, spread filling evenly, then roll tightly and cut into pieces.
  6. 6. Bake at 350°F for about 25 minutes until golden brown.
  7. 7. For frosting, beat cream cheese and butter together; gradually mix in powdered sugar and matcha until smooth.
