  • 1/2 cup cold unsalted butter
  • 1 pound fresh strawberries (diced)
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/2 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • 1/3 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon salt
  • about 3/4 of one 8-ounce container whipped topping (fat-free or homemade)
  • strawberry slices (for garnishing)

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, mix flour, sugar, and salt. Cut in cold butter until crumbly. Press into a greased 9×9 inch baking pan.
  2. Bake the crust for about 15 minutes until lightly golden. Let cool slightly.
  3. In another bowl, whisk eggs and sugar together. Add cream, vanilla, and flour until smooth. Fold in diced strawberries.
  4. Pour the custard mixture over the cooled crust and bake for an additional 40–45 minutes until set.
  5. Cool completely at room temperature before refrigerating for at least two hours. Slice and top with whipped topping and reserved strawberry slices.
