  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • ½ cup sour cream
  • 2 large eggs
  • ½ cup strawberry puree or jam
  • 1 ½ cups crushed graham crackers or golden Oreos
  • ¼ cup unsalted butter (for crust)
  • 1 cup crushed golden Oreos or vanilla wafers (for topping)
  • ½ cup freeze-dried strawberries

Instructions

  1. Preheat your oven to 325°F (163°C) and line a mini muffin tin or an 8×8-inch pan with parchment paper.
  2. In a bowl, combine crushed graham crackers with melted butter and press firmly into the bottom of your prepared pan.
  3. Beat cream cheese and sugar until smooth; add eggs one at a time. Mix in sour cream, vanilla extract, and strawberry puree.
  4. Pour the cheesecake mixture over the crust and bake: 20–25 minutes for mini muffins or 35–40 minutes for a larger pan until set but slightly jiggly.
  5. Allow to cool at room temperature before refrigerating for at least four hours.
  6. For the topping, mix crushed Oreos with freeze-dried strawberries and melted butter; sprinkle over chilled bites.
