  • 1 1/2 cups All-purpose flour
  • 1/2 tsp Baking soda
  • 1/2 tsp Salt
  • 1 tsp Cornstarch
  • 1/2 cup Unsalted butter (room temperature)
  • 3/4 cup White granulated sugar
  • 1 tsp Pure vanilla extract
  • 2 Large eggs (room temperature)
  • 1 oz Freeze dried strawberries (grounded)
  • Pink food dye
  • 1/2 cup White chocolate chips
  • 3 TBSP White granulated sugar
  • 1/3 cup Powdered sugar

Instructions

  1. In a medium bowl, combine flour, baking soda, salt, and cornstarch. Whisk together.
  2. Blend freeze-dried strawberries into a fine crumb using a food processor.
  3. In a mixer, cream together butter and sugar until light and fluffy. Add vanilla extract, eggs, ground strawberries, and pink food dye; mix until combined.
  4. Combine wet and dry ingredients on low speed until just mixed. Fold in white chocolate chips.
  5. Preheat oven to 350°F (175°C) and line two cookie sheets with parchment paper.
  6. Roll dough balls in granulated sugar first, then coat generously in powdered sugar.
  7. Bake for 8–10 minutes until edges are set but centers remain soft. Cool on baking sheets before transferring to a rack.
