  • 1 cup finely chopped fresh strawberries

  • 1 tablespoon lemon juice
  • 1 cup graham cracker crumbs
  • 3 tablespoons melted butter
  • 2 cups white chocolate chips
  • Food coloring (pastel shades)
  • Sprinkles or chocolate drizzle for decoration

Instructions

  1. In a mixing bowl, beat together softened cream cheese, powdered sugar, finely chopped strawberries, vanilla extract, and lemon juice until smooth. Chill in the refrigerator for 30-45 minutes.
  2. Combine graham cracker crumbs, melted butter, and granulated sugar in another bowl. Press this mixture into the bottoms of egg-shaped molds to form the base.
  3. Spoon the chilled cheesecake filling over the crust in each mold and smooth with a spatula. Freeze for 2-3 hours until firm.
  4. Melt white chocolate chips in a microwave-safe bowl and add food coloring to reach desired pastel shades. Dip each frozen cheesecake egg into the melted chocolate until fully coated.
  5. Remove excess chocolate by tapping against the bowl’s edge and decorate with sprinkles or drizzle with contrasting chocolate while still wet. Allow to set for about 20 minutes before serving.
