  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper, to taste
  • ¼ cup soy sauce (low sodium preferred)
  • ½ cup brown sugar (packed)
  • ¼ cup crushed pineapple, undrained
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • ¼ teaspoon onion powder
  • ¼ teaspoon black pepper
  • 1 teaspoon sesame seeds
  • 2 teaspoons cornstarch

Instructions

  1. Season 4 small chicken breasts with salt and black pepper.
  2. Heat 1 tablespoon of olive oil in a skillet over medium-high heat, cooking the chicken for about 3 minutes on each side until golden brown and cooked through (165°F internal temperature). Remove from skillet.
  3. In the same skillet, combine ¼ cup soy sauce, ½ cup packed brown sugar, ¼ cup crushed pineapple (undrained), 2 minced garlic cloves, 1 teaspoon ground ginger, and sesame seeds. Whisk together.
  4. Simmer the sauce for 3-4 minutes until it thickens to a glossy consistency.
  5. Return the chicken to the skillet, coating it thoroughly in the sauce. Serve over rice or noodles.
