For the Coconut Bars:
1 cup unsalted butter, softened
1 1/2 cups granulated sugar
4 large eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
2 cups sweetened shredded coconut

For the Lime Frosting:
1/2 cup unsalted butter, softened
4 ounces cream cheese, softened
3 cups powdered sugar
2 tablespoons fresh lime juice
1 tablespoon lime zest
1 teaspoon vanilla extract

Instructions

  • Preheat the oven to 350°F (175°C). Grease and line a 9×13-inch baking pan with parchment paper.
  • In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture and mix until combined.
  • Fold in the shredded coconut evenly throughout the batter.
  • Spread the batter evenly into the prepared baking pan.
  • Bake for 25 to 30 minutes, or until the top is lightly golden and a toothpick inserted in the center comes out clean.
  • Allow the bars to cool completely before frosting.
  • To make the frosting, beat together the butter and cream cheese until smooth and creamy.
  • Add the powdered sugar gradually, then mix in the lime juice, lime zest, and vanilla extract until fluffy.
  • Spread the lime frosting evenly over the cooled bars.
  • Chill for 20 minutes before slicing into squares for cleaner cuts.
