  • 2 cups chocolate chips (semi-sweet or milk)
  • 1 cup all-purpose flour (or gluten-free flour)
  • ½ cup finely ground graham crackers
  • 3 cups large vegan marshmallows
  • ½ cup sugar
  • 1 tbsp baking powder
  • ¾ cup buttermilk
  • 1 tsp espresso powder
  • ½ tsp salt
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 6 tbsp cold butter

Instructions

  1. Preheat the oven to 375°F (190°C) and butter a baking dish.
  2. In a mixing bowl, combine heavy cream, espresso powder, chocolate chips, and vanilla extract; stir until smooth.
  3. In another bowl, mix flour, ground graham crackers, sugar, baking powder, salt, cinnamon, and vanilla extract. Cut in butter until crumbly; stir in buttermilk just until combined.
  4. Pour chocolate filling into the dish and top with spoonfuls of the batter. Add halved vegan marshmallows on top.
  5. Bake for about 40 minutes until golden brown and bubbly.
