  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning mix
  • 1 can diced tomatoes with green chilies (14.5 oz)
  • 1 can black beans (15 oz), drained and rinsed
  • 1 can corn (15 oz), drained
  • 1 cup salsa
  • 6 small flour or corn tortillas, cut into strips
  • 1 cup shredded Mexican cheese blend

Instructions

  1. In a large skillet over medium-high heat, brown the ground beef until cooked through. Drain excess fat.
  2. Add diced onion and sauté until softened (about 3–4 minutes). Stir in minced garlic for another minute.
  3. Mix in taco seasoning and canned tomatoes with their juice; cook for an additional minute.
  4. Spray the slow cooker with non-stick spray. Layer half of the tortilla strips followed by half of the beef mixture, black beans, and corn. Repeat layers and top with remaining tortilla strips and salsa.
  5. Cover and cook on low for 4–5 hours or high for 2–3 hours.
  6. About 15 minutes before serving, sprinkle cheese over the casserole until melted.
  7. Garnish with cilantro before serving alongside sour cream and optional toppings.
