Ingredients

  • 10 celery stalks
  • 1 green apple
  • 2 romaine lettuce leaves
  • 1/2 cup grapes (or sultanas)
  • 1/4 cup walnuts (or pecans/almonds)
  • 2 Tbsp dried barberries (or cranberries/pomegranate)
  • 1 Tbsp olive oil
  • 2 Tbsp lime juice (or lemon juice)
  • 1 garlic clove
  • Salt and black pepper to taste

Instructions

  1. Wash and chop the celery into bite-sized pieces.
  2. Core and dice the green apple into small cubes.
  3. Tear the romaine lettuce into smaller pieces.
  4. In a mixing bowl, combine chopped celery, diced apple, torn lettuce, grapes or sultanas, nuts, and dried barberries.
  5. In a separate bowl, whisk together olive oil, lime juice, minced garlic, salt, and pepper.
  6. Pour the dressing over the salad mixture and toss gently until well coated.
  7. Serve immediately or chill for about 30 minutes before enjoying.
