  • 4 salmon fillets (56 oz each)
  • 2 small sweet potatoes, cut into 1/4 inch rounds
  • 1 yellow onion, sliced
  • 1 red or orange bell pepper, sliced
  • 6 tablespoons extra virgin olive oil
  • 1 jalapeño, seeded if desired
  • 1/2 cup plain Greek yogurt
  • Juice and zest from 1 lime
  • 1 cup cilantro, roughly chopped
  • 24 cloves garlic, minced or grated, to taste
  • 2 teaspoons chipotle chili powder
  • 2 teaspoons smoked paprika
  • Kosher salt and black pepper, for seasoning
  • 23 cups kale, spinach or arugula, roughly torn
  • 23 cups cooked quinoa or brown rice
  • Avocado, tortilla chips, for serving

Instructions

  1. Preheat oven to 425°F.
  2. On a baking sheet, toss sweet potatoes, onions, bell peppers, and jalapeño with 3 tablespoons olive oil; season with salt and pepper. Roast for 20 minutes.
  3. Season salmon fillets with chipotle chili powder, smoked paprika, minced garlic, salt, pepper, and drizzle with remaining olive oil.
  4. After vegetables have roasted for 20 minutes, push them aside and place the salmon on the sheet. Roast for an additional 10-20 minutes until salmon is cooked through.
  5. For the sauce, blend Greek yogurt, roasted jalapeño, lime juice, honey, cilantro, and salt until smooth.
  6. Serve salmon and veggies over quinoa or brown rice with greens and drizzle with sauce.
