  • 1 pound ground Italian sausage or turkey sausage
  • 1 small sweet onion (diced)
  • 1 tablespoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 or 4 garlic cloves (minced)
  • One 28-ounce can crushed tomatoes
  • 4 large eggs
  • Fresh parsley (for garnish)

Instructions

  1. In a large skillet over medium-high heat, heat the olive oil. Add the ground Italian sausage, diced onion, smoked paprika, salt, and pepper. Cook for about 8 minutes until the sausage is browned and the onions are golden.
  2. Stir in the minced garlic and cook for an additional minute.
  3. Pour in the crushed tomatoes and stir well. Let the mixture simmer for about 3-5 minutes until slightly thickened.
