  • 400 grams boneless skinless chicken breast
  • 1 tablespoon cornstarch
  • 2 tablespoons soy sauce
  • 2 cloves garlic
  • 3 tablespoons neutral cooking oil
  • 1 cup red cabbage
  • 1 cup carrots
  • 1 cup cucumber
  • 3 stalks green onions
  • 0.25 cup fresh cilantro
  • 0.5 cup creamy peanut butter
  • 3 tablespoons fresh lime juice
  • 1 tablespoon honey
  • 1 teaspoon fresh ginger
  • Water (to adjust consistency)

Instructions

  1. Coat thinly sliced chicken in soy sauce and minced garlic, then sprinkle with cornstarch.
  2. Heat oil in a non-stick pan over medium-high heat and fry the chicken until golden brown (5–7 minutes each side). Remove from heat.
  3. Prepare vegetables: slice red cabbage, julienne carrots, slice cucumber, and chop green onions and cilantro.
  4. In a bowl, mix peanut butter, lime juice, honey, ginger, and warm water until smooth.
  5. In a large bowl, combine chilled jasmine rice, fried chicken, vegetables, and drizzle with dressing before serving.
