  • 1 (14 ounce) package beef smoked sausage, sliced
  • 1 large onion, diced
  • 3 small russet potatoes, peeled and diced
  • 6 cups chicken stock
  • 2 (15 ounce) cans organic navy beans, drained and rinsed
  • 2 cups kale, roughly chopped
  • 4 cloves garlic, pressed
  • 1 teaspoon Italian seasoning
  • Pinch or two black pepper
  • 1/2 teaspoon ground white pepper
  • 1 tablespoon chopped parsley
  • Tiny squeeze of lemon (about 1/2 teaspoon)

Instructions

  1. Prepare all ingredients by chopping and measuring as needed.
  2. In a large pot over medium-high heat, sear beef smoked sausage slices until browned.
  3. Add diced onion and sauté with Italian seasoning and peppers until softened.
  4. Stir in garlic and then add diced potatoes and chicken stock; simmer for 12 minutes.
  5. Incorporate navy beans and simmer for another 10 minutes until potatoes are tender.
  6. Remove from heat; stir in kale, parsley, and a squeeze of lemon juice.
  7. Serve hot alongside crusty bread.
