  • 1 1/2 tablespoons taco seasoning mix
  • 15 ounces tomato sauce
  • 1/2 cup diced onion
  • 3 cloves garlic, diced
  • Soft corn tortillas
  • Fresh toppings: Romaine lettuce, Monterey Jack cheese, radishes, avocado

Instructions

  1. Preheat oven to 350°F (175°C). Coat chicken with olive oil and sprinkle taco seasoning evenly. Place in a baking dish and bake for 30 minutes until cooked through.
  2. Once cool, shred the chicken with a fork. In a saucepan, heat olive oil over medium heat. Add onions and cook until tender. Stir in shredded chicken, tomato sauce, garlic, onion powder, cumin, and New Mexico Chile Powder. Simmer on medium-low for 15 minutes.
  3. Warm corn tortillas in a skillet or microwave. Assemble tacos with the saucy chicken mixture and top with chopped lettuce, shredded cheese, sliced radishes, and chopped avocado.
