  • 2 tbsp cocoa powder
  • 2 tbsp granulated sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup buttermilk
  • 2 large eggs
  • 2 tbsp melted butter
  • 1 tsp vanilla extract
  • 1 tsp red food coloring
  • 4 oz cream cheese (softened)
  • ¼ cup powdered sugar
  • 2 tbsp milk (more for a thinner consistency)

Instructions

  1. In a mixing bowl, whisk together the dry ingredients: flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  2. In another bowl, combine the buttermilk, eggs, melted butter, vanilla extract, and red food coloring.
  3. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  4. Heat a non-stick skillet over medium heat and lightly grease if needed. Pour ¼ cup of batter for each pancake.
  5. Cook until bubbles form on top (about 2-3 minutes), flip and cook for an additional 1-2 minutes until golden brown.

  7. Serve pancakes warm topped with cream cheese glaze.
