  • 1 small cucumber, seeded and thinly sliced

  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh mint
  • 2 tablespoons toasted sunflower seeds or pumpkin seeds

Instructions

  1. Use a vegetable peeler to slice the carrots into thin ribbons and place them in a large mixing bowl.
  2. Add the thinly sliced cucumber to the bowl with the carrot ribbons.
