  • 1 cup unsalted butter
  • 1 lemon
  • 1 ½ cup water
  • ½ cup granulated sugar
  • 1 cup whipping cream (cold)
  • 1 lb mascarpone cheese
  • 2 cups raspberry curd (cooled or room temperature)
  • ½ cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 2 packs ladyfingers
  • Lemon slices (for decorating)
  • Fresh raspberries (for decorating)

Instructions

  1. Prepare the raspberry syrup by heating water, sugar, and raspberries in a saucepan until dissolved. Cool.
  2. Make the lemon curd by whisking lemon juice, eggs, and sugar in a bowl; heat gently until thickened, then cool.
  3. Whip cold cream until soft peaks form and fold in mascarpone cheese. Add cooled raspberry curd and mix well.
  4. Dip ladyfingers briefly in cooled raspberry syrup and layer them with cream filling in a dish.
  5. Refrigerate for at least four hours before serving, topping with fresh raspberries and lemon slices.
