  • 1 cup lukewarm water
  • 6 tablespoons shortening or unsalted butter
  • 1 cup granulated sugar
  • 9 cups unbleached all-purpose flour
  • 2 cups hot water
  • 2 beaten eggs
  • 1 tablespoon salt
  • 3 1/2 cups raspberries
  • 4 ounces cream cheese (room temperature)
  • 1 cup powdered sugar
  • 1/4 cup unsalted butter (at room temperature)
  • 1/2 cup light brown sugar
  • 1/3 cup granulated sugar
  • Zest of 1 large lemon
  • 1 1/2 teaspoons cornstarch
  • 1 teaspoon lemon zest

Instructions

  1. In a bowl, dissolve yeast in lukewarm water; let sit until foamy.
  2. Mix shortening, sugar, and salt with hot water in a stand mixer; cool to lukewarm.
  3. Stir in flour until smooth; add yeast mixture and eggs; mix well.
  4. Gradually add remaining flour while mixing until smooth and satiny.
  5. Let the dough rise in a greased bowl for about 30 minutes until doubled.
  6. Roll out dough, spread with softened butter, sprinkle with brown sugar.
  7. Prepare raspberry filling by mixing raspberries with sugar and cornstarch; spread on dough.
  8. Roll up the dough and cut into pieces; place in greased baking pan.
  9. Let rolls rise again until doubled (about an hour).
  10. Bake at 350°F for 25–32 minutes until golden brown; cool on wire rack.
  11. For frosting, beat cream cheese, butter, powdered sugar, and lemon zest until smooth; spread over warm rolls.
