  • 1 cup white vinegar (chicken vinegar or white apple vinegar)
  • 1/2 cup honey
  • 1 teaspoon salt
  • 1/2 teaspoon mustard seeds (or grainy mustard)
  • 1/2 teaspoon whole peppercorns
  • 1/2 teaspoon coriander seeds
  • 1 pint fresh strawberries (approximately 1216 berries)

Instructions

  1. Prepare the pickling liquid by combining vinegar, honey, salt, mustard seeds, peppercorns, and coriander seeds in a small saucepan. Bring to a boil and stir well.
  2. Remove from heat and let steep for about 10 minutes to enhance flavors.
  3. Trim strawberry tops and place them in a mixing bowl. Pour cooled pickling liquid over strawberries. Cover and chill for at least 2 hours or up to 24 hours.
  4. Serve as a topping for grilled beef or enjoy on crackers with cream cheese.
