  • 4 large ripe plantains
  • 1 lb ground beef
  • 2 tsp adobo seasoning
  • 1 tbsp sazon seasoning
  • 1 onion, minced
  • 3 garlic cloves, minced
  • 1 green bell pepper, minced
  • ¼ cup fresh cilantro, chopped
  • â…“ cup olives or capers
  • 1 cup tomato sauce
  • 2 cups dairy-free cheese
  • 3 large eggs, beaten
  • Coconut oil for frying

Instructions

  1. Preheat oven to 356°F (180°C).
  2. Grease a casserole dish and set aside.
  3. In a bowl, season ground beef with sazon and adobo.
  4. Sauté onion, garlic, bell pepper, and cilantro in coconut oil until soft.
  5. Add seasoned beef to skillet; cook until browned.
  6. Mix in tomato sauce and olives/capers; simmer for 5–10 minutes.
  7. Prepare plantains by slicing and frying until golden brown.
  8. Layer fried plantains at the bottom of the casserole dish; brush with egg mixture.
  9. Spread ground beef over plantains; sprinkle with dairy-free cheese.
  10. Repeat layering until all ingredients are used, finishing with plantains and cheese on top.
  11. Bake for about 20 minutes until golden brown.
