  • 1 medium pineapple (with 1 cup of pineapple chunks reserved)
  • 1 ½ lbs boneless skinless chicken breasts, cut into bite-sized pieces
  • ½ tsp salt
  • ¼ tsp ground black pepper
  • 1 Tbsp cooking oil (vegetable oil, coconut oil, olive oil etc.)
  • 1 cup pineapple chunks (from the pineapple boats)
  • ¼ cup soy sauce
  • ¼ cup water
  • 3 Tbsp brown sugar
  • 1 tsp ginger powder
  • 3 Tbsp rice vinegar (or apple cider vinegar)
  • 2 tsp cornstarch (or arrowroot powder)
  • 3 garlic cloves, minced
  • 2 cups cooked rice (brown rice or white rice)
  • 1 green onion (chopped)
  • ½ tsp sesame seeds

Instructions

  1. Prepare the Pineapple Boats: Cut the pineapple in half lengthwise and carve out the fruit, leaving about half an inch around the edges. Reserve 1 cup of chunks.
  2. Cook the Chicken: In a large skillet over medium heat, heat cooking oil. Add chicken pieces seasoned with salt and pepper; cook until browned (about 5–7 minutes).
  3. Make the Teriyaki Sauce: In a mixing bowl, combine reserved pineapple chunks, soy sauce, water, brown sugar, rice vinegar, cornstarch, and minced garlic. Mix until smooth.
  4. Combine Chicken with Sauce: Pour the teriyaki sauce over cooked chicken; stir to coat evenly. Cook for an additional 5–7 minutes until thickened.
  5. Serve: Spoon the chicken mixture over cooked rice in each pineapple boat; garnish with chopped green onions and sesame seeds.
