  • 2 tablespoons hoisin sauce

  • 2 teaspoons rice vinegar
  • 1 tablespoon vegetable oil
  • 1 red bell pepper
  • 1 onion
  • 2 cloves garlic
  • 1 teaspoon ginger
  • 1 ½ cups canned pineapple chunks

Instructions

  1. Prepare your ingredients: Dice chicken and chop vegetables uniformly. Mix all sauce ingredients in a bowl until well combined.
  2. Heat a wok or large skillet over medium-high heat. Add vegetable oil once hot.
  3. Cook chicken pieces in the hot oil for about 5-7 minutes until golden brown, seasoning with salt and pepper.
  4. Add onion, red bell pepper, garlic, and ginger; stir-fry for about 3-4 minutes until tender-crisp.
  5. Pour in the prepared sauce along with canned pineapple chunks; simmer for an additional 3-5 minutes until the sauce thickens slightly.
  6. Remove from heat and garnish with green onions and sesame seeds before serving.
