  • 1 pound chicken breast, cubed
  • 1 cup pineapple, cubed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • Green onions and sesame seeds for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add cubed chicken; cook until golden brown and fully cooked. Remove chicken from skillet.
  2. In the same skillet, sauté onion, garlic, and red bell pepper until softened.
  3. Add cubed pineapple; cook for about 2 minutes.
  4. Stir in jasmine rice, chicken broth, soy sauce, grated ginger, salt, and pepper. Bring to a boil.
  5. Reduce heat to low; cover and simmer for 18–20 minutes until rice is cooked.
  6. Return cooked chicken to the skillet; mix well until heated through.
  7. Serve garnished with sliced green onions and sesame seeds.
