  • 2 tbsp olive or sesame oil
  • 2 cloves garlic, minced
  • 1/2 cup low-sodium soy sauce
  • 1/3 cup pineapple juice
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar
  • 1 tsp cornstarch
  • 1.5 cups cooked rice
  • 1 cup pineapple chunks
  • 1/2 red bell pepper, diced
  • 1/4 cup green onions, chopped

Instructions

  1. Cut the chicken into bite-sized pieces and sauté in oil over medium-high heat until browned and cooked through (about 5-7 minutes). Set aside.
  2. In the same skillet, cook minced garlic for 30 seconds until fragrant. Add soy sauce, pineapple juice, honey, and vinegar; stir to combine.
  3. Mix cornstarch with water until dissolved, then add to the skillet while stirring continuously to thicken the sauce (2-3 minutes).
  4. Return chicken to skillet, add pineapple chunks and bell pepper; cook for an additional 2-3 minutes until vegetables are tender.
  5. Serve over rice and garnish with green onions.
