  • 2 tbsp Olive or Sesame Oil
  • 2 cloves Garlic (minced)
  • 1/2 cup Soy Sauce (low sodium preferred)
  • 1/3 cup Pineapple Juice
  • 2 tbsp Honey or Brown Sugar
  • 1 tbsp Rice Vinegar or Apple Cider Vinegar
  • 1 tsp Cornstarch
  • 1.5 cups Cooked Rice
  • 1 cup Pineapple Chunks
  • 1/2 Red Bell Pepper (diced)
  • 1/4 cup Green Onions (chopped)

Instructions

  1. Prepare all ingredients by chopping the vegetables and mincing the garlic.
  2. In a skillet over medium heat, heat olive or sesame oil. Add chicken breast pieces and cook until golden brown, about 5–7 minutes.
  3. Stir in minced garlic, cooking until fragrant (about 30 seconds).
  4. In a bowl, whisk together soy sauce, pineapple juice, honey or brown sugar, rice vinegar, and cornstarch mixture until smooth.
  5. Pour the sauce over the chicken in the skillet. Add pineapple chunks and diced red bell pepper; stir to combine.
  6. Let simmer for about 5–7 minutes until heated through.
  7. Serve over cooked rice and garnish with green onions, sesame seeds, and crushed red pepper if desired.
