  • 2 garlic cloves (minced)
  • 1/2 cup soy sauce
  • 1/3 cup pineapple juice
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice or apple cider vinegar
  • 1 tsp cornstarch + 1 tbsp water
  • 1.5 cups cooked rice
  • 1 cup pineapple chunks
  • 1/2 red bell pepper (diced)
  • 1/4 cup green onions (chopped)
  • Sesame seeds, red pepper flakes (optional)

Instructions

  1. Heat oil in a skillet over medium heat and sauté diced chicken until fully cooked and browned. Remove from the pan.
  2. In the same skillet, briefly sauté minced garlic until fragrant. Add soy sauce, pineapple juice, honey (or brown sugar), and vinegar to create the sauce.
  3. Mix cornstarch with water to form a slurry; stir into the sauce and cook until thickened.
  4. Add the cooked chicken back into the skillet along with pineapple chunks and diced bell pepper; mix well.
  5. Gently stir in the cooked rice until combined; heat through.
  6. Garnish with chopped green onions and sesame seeds before serving.
