  • 3/4 tsp baking powder
  • 1/4 tsp kosher salt
  • 1 cup vegan marshmallows fluff
  • 1/4 cup creamy peanut butter, warmed
  • 1/2 cup milk chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together peanut butter, softened butter, granulated sugar, and light brown sugar until fluffy. Add the egg and vanilla extract.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually mix into the wet mixture until combined.
  4. Scoop tablespoon-sized portions onto the baking sheet, flatten slightly with a fork, and bake for 10–12 minutes until golden around the edges.
  5. Allow cookies to cool before assembling: spread vegan marshmallows fluff on one cookie half, drizzle with melted chocolate, and top with another cookie.
