  • 6 tablespoons unsalted butter (melted)
  • 1 ¾ cups graham cracker crumbs
  • 1/4 cup roasted peanuts (finely crushed)
  • 1/3 cup brown sugar
  • 1 teaspoon kosher salt (divided)
  • 2 pounds cream cheese (softened)
  • 1 cup creamy peanut butter
  • 1 cup sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup Concord grape jelly

Instructions

  1. Preheat your oven to 350°F and spray a 9 x 13-inch baking pan with cooking spray.
  2. In a mixing bowl, combine graham cracker crumbs, crushed peanuts, brown sugar, and salt. Stir in melted butter until it resembles wet sand. Press this mixture into the bottom of the prepared pan and bake for 12-15 minutes until set.
  3. Reduce the oven temperature to 325°F. In an electric mixer, beat together cream cheese and peanut butter until smooth. Gradually add sugar and remaining salt; then mix in eggs one at a time followed by vanilla.
  4. Pour the filling over the cooled crust and bake for 40-45 minutes until slightly puffed but wobbly in the center. Allow to cool completely.
  5. Melt grape jelly over medium heat until smooth; let it cool slightly before pouring it over the cheesecake layer. Chill for at least two hours before cutting into bars.
