  • 200 g granulated sugar
  • 115 g unsalted butter, softened
  • 2 large eggs
  • 1 tablespoon freshly grated lemon zest
  • 60 ml freshly squeezed lemon juice
  • 190 g all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 120 ml whole milk
  • 120 g powdered sugar
  • 2 tablespoons lemon juice

Instructions

  1. Preheat your oven to 175°C. Grease and line a 23 cm round cake pan with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing thoroughly after each addition.
  4. Stir in the lemon zest and juice until well combined.
  5. Add the flour, baking powder, and salt; mix gently until just combined.
  6. Gradually add the whole milk while stirring until the batter is smooth.
  7. Pour the batter into the prepared cake pan and bake for 30–35 minutes or until a skewer comes out clean.
  8. While baking, prepare the glaze by whisking together powdered sugar and lemon juice until smooth.
  9. Let the cake cool for about 10 minutes before transferring it to a wire rack; drizzle with warm glaze.
