  • 1/2 cup butter
  • 1/2 cup granulated sugar
  • 2 tbsp brown sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 1/4 tsp almond extract (optional)
  • 1/2 tsp baking powder
  • 1 cup all-purpose flour
  • 3 tbsp cornstarch
  • 1/4 tsp salt
  • 4 tbsp butter (for frosting)
  • 1 cup powdered sugar
  • 1 tsp vanilla extract (for frosting)
  • 3 tbsp heavy cream
  • Patriotic sprinkles

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9×9 inch baking pan with parchment paper.
  2. In a mixing bowl, cream together 1/2 cup butter, 1/2 cup granulated sugar, and 2 tbsp brown sugar until fluffy. Add in 1 large egg and mix well with 2 tsp vanilla extract and optional almond extract.
  3. In another bowl, combine 1/2 tsp baking powder, 1 cup flour, 3 tbsp cornstarch, and 1/4 tsp salt. Gradually mix into the wet ingredients until just combined.
  4. Spread the batter evenly in the prepared pan and bake for about 15 minutes or until lightly golden around the edges.
  5. Cool completely on a rack before frosting with a mixture of softened butter, powdered sugar, vanilla extract, and heavy cream. Top with patriotic sprinkles.
