  • 3/4 cup (108g) brown sugar
  • 1/4 cup (52g) sugar
  • 1 egg
  • 2 tsp vanilla extract
  • 2 cups (260g) all purpose flour
  • 1 tsp baking soda
  • 1 tsp cornstarch
  • 1/2 tsp salt
  • 3/4 cup (125g) semi-sweet chocolate chips
  • 3/4 cup (146g) chopped M&Ms
  • 23 tbsp red, white and blue sprinkles
  • 1/2 cup (112g) salted butter for frosting
  • 1/2 cup (95g) shortening
  • 4 cups (460g) powdered sugar
  • 1 1/2 tsp vanilla extract for frosting
  • 23 tbsp water or milk for frosting
  • Red gel icing color
  • Sprinkles for decoration

Instructions

  1. Preheat your oven to 350°F (176°C) and prepare a cupcake pan with non-stick spray.
  2. Cream together unsalted butter, brown sugar, and granulated sugar until fluffy.
  3. Mix in the egg and vanilla extract until well combined.
  4. In another bowl, combine flour, baking soda, cornstarch, and salt; gradually mix into the wet ingredients.
  5. Fold in chocolate chips, M&Ms, and sprinkles.
  6. Press about 2 tablespoons of dough into each cupcake mold to form cups.
  7. Bake for 10-12 minutes until edges are golden; cool before removing from the pan.
  8. For frosting, mix salted butter and shortening until smooth, then add powdered sugar and vanilla; color as desired.
  9. Pipe frosting onto cooled cookie cups and top with more sprinkles.
