  • 1 1/2 cups crushed pretzels
  • 1/2 cup unsalted butter
  • 2 Tbsp. granulated sugar
  • 8 oz. cream cheese, softened
  • 1 cup powdered sugar
  • 1 Tbsp. lemon zest
  • 1 tsp. lemon juice
  • 8 oz. frozen whipped topping, thawed
  • 1 cup boiling water
  • 3 oz. box berry blue Jell-O
  • 1 cup fresh blueberries
  • 1 cup boiling water
  • 3 oz. box raspberry Jell-O
  • 1 cup fresh raspberries

Instructions

  1. Preheat the oven to 400°F (200°C) and prepare a 9" springform pan.
  2. Mix crushed pretzels with melted butter and sugar; press into the pan to form the crust. Bake for about 10 minutes until golden, then cool completely.
  3. Beat cream cheese and powdered sugar until smooth; add lemon zest and juice, then fold in whipped topping. Spread over the cooled crust.
  4. Dissolve each Jell-O flavor in boiling water and cool slightly before layering over the cream cheese mixture, adding fresh berries on top.
  5. Chill in the freezer for at least four hours until set.
