  • 1 lb ground beef
  • 1 small yellow onion (diced)
  • 2 medium carrots (diced)
  • 3 ribs celery (diced)
  • 2 cloves garlic (minced)
  • 29 oz diced tomatoes (with the liquid, 214.5 oz cans)
  • 15 oz dark red kidney beans (drained and rinsed)
  • 15 oz cannellini beans (drained and rinsed)
  • 15 oz tomato sauce
  • 1 cup beef broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp sugar
  • 8 oz Ditalini pasta

Instructions

  1. In a Dutch oven, brown the ground beef over medium heat for about 7 minutes until fully cooked. Drain excess grease.
  2. Add diced onion, carrots, and celery; sauté for about 10 minutes until softened. Stir in minced garlic and cook for an additional 1-2 minutes.
  3. Mix in diced tomatoes, beans, tomato sauce, beef broth, and seasonings (basil, oregano, salt, pepper, sugar). Bring to a simmer for 20 minutes.
  4. Cook Ditalini pasta separately per package instructions; drain.
  5. Combine drained pasta with the soup just before serving. Garnish with fresh herbs if desired.
